What is TOUBA coffee?

Café Touba bears the name of the Senegalese town where the Mourides, led by Sheikh Ahmadou Bamba, drank this beverage which they associated with their religious ceremonies. This drink is made with coffee and Guinea pepper (Xylopia aethiopica fruit), called diar (black pepper in Wolof) or Selim pepper.

In recent years, Touba coffee has become more popular and its consumption has become widespread. In the streets of Senegalese cities, many street vendors, equipped with a saucepan and a stove, sell them in small cups.

Touba coffee is a true icon of Senegalese culture and is widely consumed across the country. It has also become popular in other West African countries and among the Senegalese diaspora across the world.

The origins

Coffee is more than just a drink. It embodies a rich culture, tradition and history. And Café Touba is no exception. Its fascinating history dates back to the city  Sainte de Touba considered the religious capital of Senegal. It would be Cheikh Ahmadou Bamba, the founding chief of Mouridism (a Sunni Sufi brotherhood) who brought this drink back from Gabon, when he returned from his exile, eight years after his departure.  he would have discovered the invigorating virtues of this peppery coffee and decided to share it with his companions. The addition of spices like cloves, cardamom and black pepper gives Touba coffee a unique and distinctive taste. This recipe has been passed down from generation to generation within the Mouride brotherhood, contributing to the enduring popularity of Touba coffee in the region.

Senegalese Touba coffee

To get a liter of this drink,
you need 40 gr of arabica coffee, 20 pods of
pepper
(or 50 gr of ground Toubé coffee), 1.2 liters of water (including one liter for making coffee
and 200 ml to wet the powder) and sugar at will. It should be noted that guinea pepper is a very flavored variant which resembles the association of nutmeg, cloves and
chicory.

 

The preparation of Touba coffee is simple:

boil the water , put the coffee powder in a coffee filter . Run the boiling water to obtain liquid coffee.


Reheat your coffee if it has cooled during filtering and add the sugar when savoring it.
The sensation on the palate is pleasant when you drink this drink.

 

Currently, the dosage is better controlled and allows to offer a coffee with a pleasant taste. The black pepper used is imported from Gabon or the Ivory Coast. In the different districts of Dakar, variants are also sold: the preparations contain other spices such as cloves (10 gr). There are also Touba coffee capsules (Bichri, Moriba, Touba Lansar coffee, etc.).

 

The clove brings an interesting spicy note and it is appreciated for its medicinal properties:
antiseptic and anti-inflammatory, it soothes muscle pain and helps the body to overcome attacks by bacteria, microbes and viruses. Clove also relieves digestive problems and strengthens the body's immunity.

Currently, in the big cities of Senegal, Touba coffee has become a must.  : every morning, the locals offer themselves a cup of this hot drink before indulging in their daily activities. Two out of three Senegalese, or 66  % of the population consumes the beverage of awakening.

Moreover, the merchants are numerous, because this flourishing trade makes it possible to earn between 3000 and 5000  FCFA per day (i.e. between 4.8 and 8 euros per day).

 

Initially, it was the Mouride students who started selling Touba coffee during the
holidays in order to build up some income. But today, unemployed people
are launched in this company which does not require significant investment. Less expensive than Nescafé, Touba coffee is the favorite drink of the Senegalese. Unfortunately, plastic cups are thrown everywhere on the sidewalks and pollute the cities of Senegal.

 

Currently, although Senegal is not a coffee producer, the country has become the leading exporter of Touba coffee. This drink now has more and more followers around the world.

The use of diar or black guinea pepper in the composition of Touba coffee gives it antimicrobial properties and interesting therapeutic properties.

However, you have to be careful, because roasted coffee can also be harmful to health. So, to avoid that
this drink does not harm your health, it is recommended not to drink more than two cups per day (about 200 ml).
